Smoked Tomato Recipe

Smoked tomatoes have a rich and intense flavor with a smoky undertone. The texture is soft and tender, with a slightly chewy skin and a juicy interior that bursts with flavor. If you've got in season tomatoes, absolutely throw a couple of these on your smoker as a side dish while smoking your main course, or even for use as an ingredient in other dishes.

Ingredients
  

  • 4 large tomatoes
  • 1 tbsp. olive oil
  • 1 tbsp. thyme
  • 1 tbsp. rosemary

Seasoning

  • 1 tsp. sea salt
  • 1/2 tsp. black pepper
  • 1 tbsp. smoked paprika

Recommended Wood

  • apple wood, cherry wood, or hickory wood

Instructions
 

Preparation

  • Preheat your smoker to 225°F.
  • Cut the tomatoes in half and place them cut-side up.
  • Drizzle the olive oil over the tomatoes and sprinkle with sea salt, black pepper, thyme, rosemary, and smoked paprika.

Cook

  • Place the tomatoes on the preheated smoker.
  • Smoke for 2-3 hours, or until the tomatoes are tender and lightly charred on the edges.
  • Remove the tomatoes from the smoker and let them cool to room temperature before serving.
